Managed to acquire xanthan gum this weekend which should help matters.

(Yes, my mistrust of shop-bought gluten free stuff really is that deep. Mercifully M&S mincemeat seems to be gluten free by nature!)

mincemeat should be gluten free, though I'm sure some of the nasty cheap stuff isn't. I've got a recipe for mincemeat by the way, but it's a fiddle and I've not made it since my mincer packed up: lots of friut, suet and brandy as far as I can remember. :D It's just the pastry you have to worry about...

It is actually the suet I was worried about, since a lot of suet is bulked up with wheat! Only discovered this when we were on our quest to make gluten free christmas pudding, and eventually had to use vegetarian suet (again from m&s) which was bulked up with rice flour instead of wheat. But the stuff in marks and spencers mincemeat doesn't seem to have gluten, at any rate. Didn't get around to checking anywhere else yet. (I think making the mincemeat is probably a bit much effort without a mincer, yeah!)
